Plot summary
Seven new sequences join the restored Sorcerer's Apprentice, all set to classical music and bridged by live-action hosts. In Symphony No. 5, winged creatures fight dark bat-like shapes. In Pines of Rome, a whale family can fly, and the calf becomes separated from its parents. Rhapsody in Blue follows four New Yorkers of the 1930s, each wishing for a better life. A one-legged toy soldier loves a toy ballerina and guards her from a jack-in-the-box in Piano Concerto No. 2. Flamingos try to force a yo-yo-playing member to join their routines. Mickey Mouse, apprentice to the sorcerer Yen Sid, attempts magic he cannot yet control. Donald Duck gathers animals for Noah's Ark as Noah's assistant, and along the way he misses and loses Daisy. In The Firebird, an elk wakes a sprite, and a fiery spirit stirs in a volcano.

- Because Walt Disney Studios chairman Jeffrey Katzenberg was hostile towards the Fantasia sequel, Roy E. Disney held development meetings without him and reported straight to Michael Eisner, which author James B. Stewart called unthinkable on any other animation project.
- For the Los Angeles run of Fantasia 2000, Disney built a temporary 622-seat theater costing almost $4 million in four weeks, after it could not agree to show the film for four months at the city's only IMAX theater at the California Science Center.
- Fantasia 2000 was the first major Hollywood motion picture released in IMAX and the first feature-length animated film in the format, opening in 75 IMAX theaters worldwide from January 1 to April 30, 2000.
- While working on Fantasia 2000, Roy E. Disney unearthed Destino, a short begun by Walt Disney and Salvador Dalí in 1945 that was completed in 2003, 58 years later.
- Animator Pixote Hunt and story developer Kelvin Yasuda completed 68 pastel drawings in eight days while making the Symphony No. 5 segment of Fantasia 2000.
- Piano Concerto No. 2 was the first time the Disney studio created a film's main characters entirely from CGI; only backgrounds and secondary characters had been computer-generated before. Hendel Butoy had first asked Pixar Animation Studios to handle the graphics.
- Michael Eisner's plan for the Pomp and Circumstance segment had Disney princesses and heroes in a wedding procession with their future children; staff called the preliminary artwork "an appalling abuse" of the characters, so the story was dropped and the music kept.
- The yo-yo gag in The Carnival of the Animals came from co-director Mike Gabriel, who played with a yo-yo while taking breaks from Pocahontas; he is credited for "yo-yo tricks" in the end credits.
