Plot summary
Desiree Thibodeau is a barefoot poacher who lives deep in the swampland and traps alligators to support herself and her siblings. Ben Bracken and Deputy Billy Boy find her at her traps and chase her, looking to do her harm. She outsmarts the two men, but during the chase Billy Boy accidentally shoots Ben. Billy Boy brings the news to his father, Sheriff Joe Bob Thomas, and says that Desiree fired the shot. Sheriff Thomas and his son then join a search party of locals who are also looking for Desiree, and the searchers attack her family in the swampland where she lives.

- Beverly and Ferd Sebastian wrote Gator Bait as a vehicle for Claudia Jennings, but she was unavailable, so they shot for a week looking for another actress until Jennings freed up. Beverly said she would never have been satisfied with anyone else.
- Claudia Jennings wanted a part with little dialogue, so Ferd Sebastian recalled piling himself, Beverly, Jennings, their two boys, a dog and a pregnant cat into a motorhome and leaving Los Angeles for the swamps, calling it the most fun shoot he had ever been on.
- The three-month shoot was mostly in Uncertain, Texas, near Caddo Lake, where Claudia Jennings said floods wiped out their locations every day.
