Plot summary
Upstairs at Ebezeder's Café in Vienna, Schani plays a song he has dedicated to Resi, the baker's daughter, while a fire burns below. The Countess Helga von Stahl, shopping at the dressmaker's next door, hears his music and asks him to set her verses. Resi, arriving on the scene, distrusts the offer. At orchestra rehearsal Schani sits among the second violins under his father, Johann Strauss the Elder, who overhears him mocking the older man's waltzes and orders him to play one of his own. The father ridicules the piece and says his son can never make a career as a composer, so Schani quits. Resi tells him that marrying her means abandoning music and running the bakery.

- Alfred Hitchcock told François Truffaut that Waltzes from Vienna was the lowest ebb of his career, and that he only agreed to make it because he had no other film projects that year and wanted to stay working. He never made another film based on a musical.

Hitchcock dropped the stage musical's songs from his film and changed its ending: on stage Resi, the baker's daughter, picks her father's apprentice Leopold over the composer Schani (Johann Strauss II), while the film ends with Resi and Schani declaring their love.- Hitchcock said Waltzes from Vienna gave him the chance to work out ideas about film and music: every cut in the film was worked out on the script before shooting began, and the musical cuts were worked out too.
