Plot summary
Caroline is a beauty school student who waits tables at a Minneapolis diner, where her best friend Cindy works beside her. The men she dates tend to walk away or be unfaithful. Adam, the busboy and dishwasher, says little and keeps to himself. One night on her walk home from the diner, two men set upon her, and Adam appears and fights them off. Though she did not know it, he had been trailing her each night from a distance. At work the next evening she thanks him, and he begins to tell her about himself. Caroline confides in Cindy that Adam saved her life, and Cindy supports her interest in him. She also buys a used car, and Adam starts to come out of his shyness as the two become a couple.

Did you know?!Facts and trivia about Untamed Heart (1993)
Can contain spoilers, watch the movie first.
- The film was originally titled The Baboon Heart, in honor of an infant known as Baby Fae, who received a cross-species heart transplant from a baboon to fix a congenital heart defect.
- Sierchio's screenplay was originally set in New Jersey, but the production could not shoot there; while scouting Minneapolis the filmmakers found it ideal for its strong acting community, and ended up casting 35 of the film's 40 roles from the city.
- The film's centrepiece was Jim's Coffee Shop & Bakery, a diner that really existed and was closed to the public for the whole shoot; the film-makers changed the diner's name in the script so that on screen it would be Jim's.
- Tomei wanted a believable regional accent for the role, so she had her driver double as her dialogue coach during the shoot.
