Gretel is sixteen and looks after Hansel, her younger brother. Their father has died, and their mother orders them out of the house after Gretel turns down a housekeeping post because the man offering it asked about her virginity. A ghoulish man attacks Hansel in the night, and a huntsman shelters the siblings. Hungry and lost the next day, they follow the smell of baking cake through the woods to a hut where a woman named Holda offers them a meal and a place to stay in exchange for work.

- Osgood Perkins said he aged Gretel to 16 and Hansel to 8 rather than two 12-year-olds, turning the faithful Grimm adaptation into a coming-of-age story.
- Composer Robin Coudert, known as Rob, deliberately avoided typical symphonic orchestral themes for Gretel & Hansel so the score would carry melodies people could sing or whistle, which he said is unusual for horror.
