Plot summary
Sukiyabashi Jiro is a ten-seat, sushi-only restaurant that holds three Michelin stars. Jiro Ono, eighty-five, is its sushi master, and he holds that simplicity is key, that the fish, the rice and the nori matter equally, and that sushi should be eaten as soon as it is made. He repeats the same tasks daily, and he trusts a small group of vendors and the apprentices he has trained. His eldest son, Yoshikazu, fifty-something, works for him and is expected to take over the restaurant. His younger son, Takashi, also a sushi chef, left to open a restaurant of his own in Roppongi Hills, since the father's work passes to the eldest son.

- David Gelb originally planned a film about many different sushi chefs with different styles, but after visiting Jiro Ono's restaurant he found Jiro a compelling character and was fascinated by the story of Jiro's son, 50, who still works for his father, which he saw as a story of a man living in his father's shadow.
- David Gelb, a "huge Philip Glass fan", scored the film with Philip Glass compositions because he felt the music worked as a metaphor for Jiro Ono's work ethic: repetitive yet constantly building and escalating, just like Jiro's work.
