Plot summary
Two features play back to back as one double bill, with fake coming attractions shown before each segment, plus vintage theater snipes and a commercial for a fictional restaurant, Acuña Boys. The first, Planet Terror, follows one evening in a small Texas town that turns violent when flesh-eating zombies begin attacking the living. Cherry, who dances in a go-go bar, and Wray, her former lover, join forces with other survivors to get out. The second, Death Proof, centers on Stuntman Mike, a professional body double who has doctored his car for collisions and takes women for drives in it.

- Robert Rodriguez said he cast Rose McGowan as Cherry Darling in response to McGowan's blacklisting from the productions of The Weinstein Company, then the parent company of Grindhouse's distributor Dimension Films, following Harvey Weinstein's alleged sexual assault of her.
- Tarantino tried to cast both Kal Penn and Sylvester Stallone in Death Proof, but neither was free. He turned to Kurt Russell as the killer stunt driver, asking of a new generation of moviegoers: "When is Kurt Russell going to be a badass again?"
- For Cherry's fake leg, the effects teams digitally removed Rose McGowan's right leg from the shots and replaced it with computer-generated props, first a table leg and then an M16 rifle. During shooting McGowan wore a special cast that restricted her leg movement to give her the correct motion.
- To reproduce the look of damaged film reels in Planet Terror, five of the film's six 25,000-frame reels were edited with real film damage, plug-ins and stock footage.
- The "missing reels" idea came from an Italian crime movie with Oliver Reed that Tarantino was about to screen. Rodriguez recalled Tarantino saying the film really had a reel missing, leaving you guessing whether the man had slept with the girl, "and the movie still works with 20 minutes gone out of it".
- Eli Roth's fake trailer almost earned Grindhouse an NC-17 rating. It included a cheerleader stripping, bouncing on a trampoline and being stabbed, and three decapitations, the first of a victim dressed as a Pilgrim turkey at a parade whose headless body stumbles around.
- Rodriguez and Tarantino each acted as cinematographer on their own segments. Rodriguez had already shot six of his own features, but Death Proof marked Tarantino's first credit as a cinematographer.
