Plot summary
Kelly works as a police officer in New York City after serving in Vietnam. He was part of the Marine Special Forces, a unit nicknamed the Snake Eaters, and kept its habit of unorthodox methods and improvised traps. He learns his mother and father have been killed and his sister seized in rural Tennessee. Kelly drives to the small town near the attack and finds it under the control of a violent redneck clan whose leader is the demented "Junior" Night, a man who puts on a bear costume for some of his crimes. An old mechanic named King takes a liking to him and converts his chopper motorcycle into a jetski, so that Kelly can move along the local waterways.

- The bikers in Snake Eater were recruited in Saint John, and many were real-life criminals; when the production manager came to solicit them, they agreed to take part but flattened the tires of his car anyway.
- Lorenzo Lamas got his first true action lead by chance: he and the film's Los Angeles-based casting director shared the same mechanic, who suggested Lamas when she mentioned the project. His looks had previously pigeonholed him in romantic roles.
- Snake Eater was made on a CAD$1.3 million budget and an 18-day schedule so tight that some shooting days ran as long as 22 hours.
- The river arm picked for the houseboat scenes was hit by low tide, forcing the crew to move to another location, one of the problems blamed on poor location scouting.
- Composer John Massari co-wrote the theme song "Soldier" with its performer Brian Wild, and Cinépix announced a single release in Canada and the U.S., though there is no evidence it happened.
