Plot summary
Three years after the run to Texas, Big Enos Burdette is campaigning against John Conn for governor. The outgoing governor refuses him an endorsement, then orders a crate from Miami to reach the party's national convention in Dallas nine days later, and Burdette plans to deliver it himself. He tracks down Cledus Snow, who brings him and Little Enos to Bo Darville with an offer of $200,000; the Burdettes double it when they find Bandit drinking heavily since his break-up with Carrie. Cledus accepts half in advance and calls Carrie in Texarkana, where she is about to marry Junior Justice, offering her $50,000. Cledus and Carrie get Bandit back into shape, and at the Miami pier the crate's manifest is quarantined, so they return at night and find a live elephant.

- Stuntman Gary Davis set a world record by jumping a 1974 Dodge Monaco more than 150 feet during the film's roundup sequence, and suffered compressed vertebrae from the hard landing.
- The Pontiac LeMans sedans wrecked in the desert demolition-derby scene were cars a rental agency had rejected for lacking air conditioning; Pontiac handed the unwanted fleet over to the filmmakers instead.
- Jackie Gleason played not only Sheriff Buford T. Justice but also both of his brothers, Reggie and Gaylord, with Reggie built as a Canadian riff on Reginald Van Gleason III from Gleason's own television show.
- Smokey and the Bandit II opened to $10.9 million, the second-biggest opening weekend of any film at the time, behind only Star Trek: The Motion Picture.
- Star Burt Reynolds later said he did not enjoy making the film at all, viewing it as an unnecessary sequel that Universal put together purely to cash in rather than to make a good picture.
- The film's Dallas-set convention plot was written and shot before it was announced that the actual 1980 Republican National Convention would be held in Detroit instead.
