Plot summary
Adventure novelist Tom Harris is brought from Miami Beach to Voodoo Island by his publisher, Duncan Fairchild, and Fairchild's wife Coral, who want his overdue novel finished. When the plane runs out of fuel, Tom takes over from the pilot, Enrico, and sets it down on the beach. He spots a young woman swimming, then watches a zombie vanish into the water when he dives after it. A zombie attacks a fisherman with a machete, and Tom's gun does nothing to it. Charles Bentley, the island's overseer, insists the islanders are a simple people and that there are no zombies. The swimmer is Janine Biladeau, whose father, the scientist Augustus Biladeau, blames a plant-based narcotic used by the islanders.

- I Eat Your Skin was shot entirely in Florida in 1964 under the working title Caribbean Adventure, a name chosen so that potential investors would not realize Del Tenney was making a zombie film.
- Del Tenney said the film took three weeks to shoot rather than his usual two because Twentieth Century Fox insisted he use a union production crew, and would not distribute the movie otherwise.
- Del Tenney said filming was delayed by a hurricane and by cast and crew members who needed medical treatment for snakebites and illnesses caught in the Florida swamps.
- I Eat Your Skin was produced on a $120,000 budget but never found a distributor and sat unreleased for six years, until Del Tenney finally sold it to Jerry Gross for $40,000.
